- Season chicken cuts with soy sauce (or coconut aminos), vinegar, bay leaves, peppercorn and garlic for at least 20-30 minutes.
- Heat cooking pot and add oil.
- Pan-fry marinated chicken (set aside marinade for later), about 2 minutes per side.
- Add remaining marinade and water, and let simmer until tender (about 30 minutes)
- Serve with or without sauce left in the pot. Enjoy!
