They have the same translucent succulent flesh and flavor as the French beans. Once cooked, the violet hue magically fades to green, making it appear just like the green beans. They can be used raw in sandwiches, salads or in spicy cocktails; and cooked by steaming, sauteing, baking, or in recipes where French beans are used.
